ExperienceExperience of working in a large scale catering operation.
Ability to work to budgets and achieve cost ratios in a supporting capacity.
Supporting delivery of an effective operational catering service to meet customer and client need.

Qualifications/TrainingNVQ 2 in Catering (or recognised equivalent qualification).

Job description
Key areas/key tasks/main duties- Ensure students receive an exciting and varied catering service available throughout the Academy day.
- Comply with current food safety legislation.
- Ensure compliance with all health and safety policies and procedures.
- Ensure safe use of equipment and materials.
- Operate everyday equipment in accordance with instructions.
- Support Catering Manager in making daily quality and safety checks on equipment.
- In conjunction with Catering Manager, monitor and manage stock and supplies, cataloguing as required and ensuring hygienic storage in accordance with domestic and catering standards.
- Maintain high standards of food hygiene and cleanliness in the kitchen in accordance with domestic and catering standards.
- Develop good working relationships with the suppliers of food and cleaning materials.
- Maintain specialist equipment, check for quality and safety and report other damage.
- Demonstrate and assist others in safe and effective use of specialist equipment and materials.
- Direct other staff in cooking activities.
- Organise cooking routines to comply with specified standard.
- Train new staff in Health, Safety and food hygiene issues as appropriate.
- Ensure effective portion control and minimise wastage.
- Design menus and calculate costings.
- Deputise for the Catering Manager in their absence.
- Ensure the provision of a food service throughout the Academy day as required.
- Present food in a way that is attractive and encourages healthier choices.
- In conjunction with the Catering Manager, supervise the preparation of ingredients for meals.
- Support the Catering Manager in organising and supervising food service, to include catering for special functions and external caterings as required.
- Undertake skilled cooking activities connected to a full range of menu provision.
- In conjunction with the Catering Manager, oversee the preparation of healthy, nutritionally balanced menus that meet the Government’s national nutritional standards for school lunches.
- Ensure that clean and dirty processes are kept separate.
- Ensure that cooked and raw foods are kept separate during preparation, cooking and serving process.
- Support the Catering Manager in ensuring the maintenance of a clean and orderly working environment.
- Undertake basic record keeping as directed.
- Report faulty equipment and other maintenance requirements to the appropriate person.
- Comply with school security arrangements, i.e. securing entrances and exits as appropriate and reporting potential security breaches.
- Support the Catering Manager in actively promoting the Academy’s meal service to parents and pupils to increase awareness of healthy eating and the uptake of healthy school meals, e.g. attendance at parents’ evenings.
- Support the Catering Manager in managing kitchen staff including the replacement cover for staff on sick leave, training etc. in accordance with the procedure.
- In conjunction with the Catering Manager, ensure that all meals and drinks served comply with current legislation or guidance as well as with the whole Academy food policy.
- Attend relevant meetings as required.
- Participate in training and other learning activities as required.
- Have an awareness of and comply with policies and procedures relating to child protection, health and safety, confidentiality and security, reporting all concerns to an appropriate person.
- Have an awareness of the Academy curriculum where it involves food and nutrition and to extend learning to the Restaurant if appropriate.
